LaWanda's Vegetarian Wraps

1 c. Diced Yellow Squash

˝ c. Sliced Button Mushrooms or

1 Small Can Sliced Mushrooms

1/4 c. Diced Green Pepper

1/4 c. Diced Yellow or White Onion

1 T. Canola Oil

Salt

Pepper

1/8 t. Italian Seasoning

2 10-Inch Flour Tortillas

2 Slices American Cheese

Sauté vegetables in the oil until cooked but not soft. Sprinkle with salt, pepper and the Italian seasoning. Divide vegetable mixture between the two tortillas. Top with cheese. Fold into wrap or burrito shape.

Optional: May add jalapenos or black olives before wrapping tortillas.
