Corn Meal Dumplings

  • 1 cup corn meal

  • 1 teaspoon salt

  • 1 1/3 cups boiling water

  • teaspoon onion, minced

  • 1 teaspoon parsley, chopped

  • 2 eggs, slightly beaten

  • flour

Combine corn meal and salt. Add to boiling water gradually while stirring constantly. Remove from heat and stir until smooth and thick. Add onion, parsley and eggs. Stir until thoroughly mixed. Make into balls and dip in flour. Drop into boiling broth or stew. Cover tightly and simmer.
